I just found out my mass airflow sensor is missing its screen. Is this really important? Can I get a replacement one?

I'd say on a daily driver maybe. I descreened mine but sealed the airbox so nothing can get by the filter. Also an aftermarket MAF comes without a screen.

I would try and find a new one with it or grab one off the FS section here or ebay. It works two ways:
keeps big debri out of your engine that gets passed the air filter (this does happen)
smooths out the air flow that enters your intake manifold
There is NO benefit of taking it off for performance, etc.

its not a big deal, we did a big thing on it in school and it makes no difference.. for the good or bad.
I took mine out and made slight difference.Feels better....

It really depends on where the maf is placed in tract on your intake. On a fbody where the intake tract is straight through it doesn't matter as much as long as everything is sealed and nothing is going to damage the element. But take a gto where you have almost a 90 degree bend from the air filter then you're going to have a problem. The screen serves to smooth out laminar airflow to get a more accurate reading. Thus throwing your tune off.
