Is 210 or more coolant gauge normal or it should always stay 160?

NOT NECESARILY. MY CAR RUNS AT ABOUT 180-185 WHILE DRIVING WITH THE AC ON AT THOSE SPEEDS AND I EVEN HAVE A CUSTOM TUNE SO IT DOESNT EVER REALLY GET ABOUT 190 EVEN AT A DEAD STOP IN ARIZONA HEAT.

So i think i got problem..
I use it like that about 1 year..
When I ride at higher speeds the temp is 160 or low..
but if i drive stop and go traffic or a bit hard it usually goes up to 210 but not Redline..
What might be the problem
and what should I do??

Get A Tune. Your Cars Fans Wont Both Turn On Until 220 Something Degree's Which Is Wayyyyyyyy Too Hot. I Blew A Head Gasket Before I Had Mine Tuned From Running So Hot All The Time, Now I Got A Tune A New Head Gasket And Some Other Stuff And It Drives Like A Top.

I don't know how it registers on the f-body dash but with a stock stat on the highway the engine will run about 195 or so as seen by the pcm. The fan on temps for the b-body are 224/240 roughly, f-body would be similar.
With a 160 stat the pcm will see roughly 175-180 at cruise, fan temps will be say 185/190. The dash temp may read a little lower than these numbers because these are at the pump(low by the hot side) and the dash sees the head temp, being reverse flow cooling the heads are a cool spot.

ya learn something new everyday huh. thats a nice bit of info thou never knew that.
so the coolant flows from the radiator into the head of the motor than down to the bottom and back into the radiator? (roughly)
so that would mean the coolant is coolest on your heads and then gets hotter as it nears the bottom of the motor?

My car, with the stock 180 tstat and fans tuned for a 160 (haven't dropped it in yet) runs a pretty constant 190F. Idling it's about 195 and I haven't bothered to check what it is going down the highway, but I'm sure it's still between 185-190.
LT1 there has the correct fan info, so don't worry even if you get up to 235.

Your temps are dependent on two things. The first is the thermostat itself. Many (myself included) put a 160 thermostat in there. That means it will physically begin to open at that temperature. The second is the fan settings. That is done in the PCM and requires a tune. You have two fans, and they are adjusted to turn on at different temperatures (at least on my 97, I think some earlier models turned on at the same time). So just a stat change will not yield optimal results, you need to update your PCM also.
