I need to fix my wiring harness as there are some burnt wires and broken connectors. What gauge wiring is needed?

The wire gauge will depend on the current draw of a particular circuit. There is not a one size fits all solution.

Whatever gauged wire you are fixing, you will need to use that size wire!

With lots of practice, you can tell by sight. Until then, use your wire stripper. If it strips the wire w/o removing any strands, you have it correct. Most in my car are 16 gauge b/c they don't carry a lot of current. But there are also 14 gauge and a few 12 gauge.
I STRONGLY suggest Googling for more sources than the one already linked.

I was under the impression that the engine harness was composed of the same gauge wire?

I'll have to look at the wires a little more thoroughly, I didn't realize they may be different.
