Default Temp gauge acting up today but no overheating?

While I was driving around today the temp gauge suddenly shot up to 230, until today it never went above 180. When I popped the hood however, there was nothing out of the ordinary. The coolant was not boiling, it wasnt even that hot, the fans had not turned on to full speed and the EWP was working fine, no leaks anywhere. Coolant level was fine. Waited a few minutes and temp gauge went back to normal. Then later it did the same thing, it just started climbing and then out of nowhere dropped to normal temp, it didnt slowly go back down it just dropped. Any ideas what could cause this?

I'd get a scanner on it asap and see if there is (or how much) a differential between what your gauge is telling you and what the PCM is seeing. While many people consider having two coolant temp gauges ridiculous, in a situation like this it's actually helpful.

you could possibly have a bad thermostat. sometimes it opens and sometimes it doesn't... Does the temp go up even while cruising, or only when sitting in traffic?

It slowly crept up, it acted like it had stopped pumping coolant, but the gauge didn't creep back down, it went from red to 170 ish in 2 seconds

Possible air pocket in the system. You still have the coolant vent lines at the back of the heads? Do a quick bleed of the system just to make sure. Someone else mentioned sticking thermostat as well.
