Quote for true dual exhaust
Just got quoted from a custom exhaust shop to make and put on true duals with cats ~$1,200. Downtime 1-2 days. I'm unsure what cats/piping they're using - I don't think it's stainless.
This seem reasonable?...
I can't do it myself - getting cold outside, I don't know how to weld and I hurt my bike in a motorcycle accident this summer.

Im sure you could build your own but it would be a pita, if you were to go over the axle! Now if you dumped them before the axle i could def see it being pretty easy.
If it were me though I would stay with the catback and just utilize an electric cutout. As you would have the best of both worlds. I myself dont like any drone when im on the highway so the true duals are out of the question.
Cost wise you would be at about 650 if you chose to utilize a system like magnaflow and a dmh e-cutout.
Thats just my opinion, to each his own.

As for the cats I would use the same inlet/outlet as the piping you chose to run (2.5, 3.00in) I dont have to comply with any sort of emissions here in Kansas so I wouldnt know what to recommend as far as cats go.

Totally agree. To go up and over the axle is a lot of work especially if its quality mandrel bent work. Look at my TD's in my sig, I would not do that in mandrel aluminized for less than $1200 period. FTR I would guess I have 40 hours in the design, construction and finishing touches in my TD's.
