Default Replace Cat Converters?

Had my 97 LT1 rebuilt a couple summers ago. After the rebuild, it was burning a LOT of oil ... 1qt per 600 miles. Tore the engine down the next winter and found a bad valve seal. But not wanting to be without my car that summer, I drove it all summer long burning that much oil. I figure I went through about 25 Quarts. Here's my question... All of that was burning and running through the converters. I don't have any O2 sensor errors, but I'm curious if I should consider replacing the Cats, if I could be losing performance or efficiency. Any thoughts? Thanks.

Depending on where you are I would just delete them and call it a day

I would LOVE to scrap them, but I'm in NY state, and it's newer than 96, so I'm stuck.
