Besides the machine work and the bearing re size the biggest question is what condition are the crank and rods in? Those will make the cost go up big time if they are shot.

How many miles on the engine, that would determine what parts I would replace because everything has a fatigue cycle. at the least I would add forged pistons and better rods (Scat Pro Comp I beams with ARP 2000 cap screws) along with ARP head and main bolts. That would give you a solid foundation to build on should you choose to up the power later.

Uh depending on the rods and crank still being good... rough prices.
$180-$220 to bore/hone
$600 for Mahle power pack forged with moly rings
$250 to balance rotating assembly
$300 bearings/gaskets

Might as well do a cam/springs/lifters/pushrods/rockers while it's apart (tack on another $1,000).

These are pretty accurate prices if using stock rods/crank/pistons. I think if you were to have the shop assemble the engine it would cost you around 2g's after all is said and done.

Thing is if the engine is actually that worn you need to figure out what damaged it or you will ruin a new engine.

If the mains spun then the block might not be worth trying to salvage.

Also keep in mind what these guys are quoting is no head work and if they want to do a head "rebuild" for $300 I would not let them screwup the castings, heads are where power is and worthwhile work cost money.
