Default tempermental LT1

I got a 94 Z28 and it's been idling weird for a little. Just put it new IAC motor, new 52mm throttle body, new MAF, and valve cover gaskets because of an oil leak. I still catch it running at 1500-2000 Rpms at idle but it will drop down to 500-800rpms sometimes. Also discovered coolant disappearing Into the oil and turning it into chocolate milk almost. No smoke during heavy acceleration but was told it might be Head Gaskets or Intake gaskets.. any opinions? Would be very much appreciated. Thanks

Coolant getting into the oil...head gaskets would be the first suspect. There is no coolant running into the intake.

Coolant in the oil, stop driving it and do a pressure test or leak down test before you wipe a bearing.

^ listen to this man, water will prevent your bearings from staying lubricated and will wear them very quickly until you spin one
