Stall & gears that won't effect top end/ top speed
My car has 2.75's stock and I'm a person that appreciates the top end of power. Just curious if there are any combos for me or every stall/gear setup has top end sacrifices.

Not that you can drive 150 mph, all things being equal.
2:73 @ 150 mph is 3762 rpm od, can be done in 3rd gear at 5375 rpm
3:73 @ 150 mph is 5140 rpm od

2.73's wont give you pull, no matter what speed. It's a tall gear which equal less torque at the wheels at any speed/rpm. And since 2.73's with stock tires at redline in 4th puts the car at a theoretical 230+mph, you'll never hit it.
Like AgFormula02 said, you'll likely gain top end (and definitely acceleration) with higher gears (3.42/3.73).
Honestly, from what it sounds like, I think you'd be happy with 3.42's. They can be had from a manual and are a factory option (usually the strongest option). This will gain you quite a bit in acceleration, but still keep the RPM a bit low on the highway.
3.42's would max out (5800 RPM) at 190mph in 4th on stock tires, which the car likely will never hit. But if you did mod it up to get to more speed than that, you'll gain RPM range too. This will push theoretical speed to over 200mph, which would require a LOT of power at high RPM.
But, at say 75mph you'll be at 2300 RPM; about 400 RPM more than you are now.
A stall wont effect top speed so long as it's a lock up. All the stall does is allow more RPM at lower speeds. This puts more TQ to the ground at the same lower speed as before. Anything above the stall speed should be relatively the same as a tq. converter with a lower stall speed. Unless you stick a 6000 RPM stall in, it won't effect top speed. That or a none lock up stall.
If you're worried about the stall at highway speed, that's what the lock up is for.
