Question please HELP with 170 deg. thermostat

i ordered a "Be Cool" 170 deg thermostat a few days ago from JEGS. last nite i put the thing in my car and i noticed that when i put the thermostat in the water pump it bottomed out before it was seated. so i figured i would try it anyway eventho the bottom of the spring on the thermostat was pressed againt the inside of the water pump... after the car was bolted together i took it out on the street and had my data logger running to see what the water temp was doing while i was driving. i noticed that at first the water was around 180 but it crept up to 204 before shooting back down to 180 again. this cycle happened a few times before i came home. oh, and this is with both fans running, by the way. i am thinking that the thermostat was opening around 204 instead of 170 since it didn't fit right in the water pump housing. has anyone else had a problem with aftermarket thermostats not fitting? where can i get a good one that will fit, and actually open when i want it to??

i looked at a 160 degree from the local parts store. they had one for "all chevy 350's"... it was the same outer diameter as the one i took out of the car, but the hole for the coolant to flow thru was much tinier than the stock one i pulled out. i didn't buy it because i was worried that it wouldn't flow enough coolant. what brands are you all running?
