What will a stock t56 hold?
Im getting ready to do my ls swap in my 89 2wd s10. (5.3 mpt70, 6 speed, 8.8 explorer rearend with 3.73s and a trac-loc, 2800lbs and 5-550rwhp)
I dont forsee traction as being what you would say "plentiful" and I dont intend on "beating" on the transmission or the rest of the drivetrain, but, it will see some (maybe once a month if that) track time with a sticky drag radial and some good launches in boost, so Im wondering how long the stock t56 hold up in my setup?

The T56 is good for 650rwhp/tq. If you get it built with upgraded parts (the Stage 2 build that I offer, for example), it still holds the same power. It just makes it much more durable. In stock form, the tranny will definitely need some attention sooner or later. Doesn't really matter how much power you have or don't have.

Do you sell built stage 2 tannys done and ready to go? if so how much?

I'd recommend the Diamond Stage 1 over the LS7. Its very similar, but has a stronger pressure plate (good for 500hp/tq). The Stage 2 is a popular choice as well, and good for 600. Both drive just about like stock with no chatter at all. I can make you a package deal on both a clutch and T56.

Yes, I do, but it's usually much cheaper to just get yours rebuilt, or exchange it for a rebuilt one (with upgrades). I sell T56's outright on a very limited basis for $1800.

And im looking to have 5-550rwhp in a 2800+/-lb truck so which clutch would you recomend and how much?

If you are lucky, then you may only need one gear, or it could be a trashed T56 that needs $800 in additional parts. It normally doesn't go over $1500 for a rebuild no matter how bad the tranny is. The average rebuild is $1000 total.
As for the clutch, I'd recommend the Stage 2. Or if you plan to go to the track a lot, then a Stage 3. Both drive nicely on the street. The Stage 3 has more of a rigid engagement/disengagement.

Mine didn't last with bolt-ons. Had a slu of problems when I came back from a deployment and it was sitting. Got it redone through t56 rebuilds at the time (RIP .. ) A rebuild makes a HUGE difference.
