I'd say certain parts were speed up. The guy he's "fighting" doesn't move much, there is a reason. And in the first part where he does kinda move he looks likes hes moving really slow/weird/ackwardly. Did this so he would appear to be moving real time after speeding up the film.

It appears to be American Kenpo Karate, or a variant of it. Depending on the level of training and skill, many Kenpo stylist can indeed move that quickly A very effective close quarters combat system.

He's the one the proper strikes or techniques are demonstrated upon. His job when training with a partner (not the instructor necessarily) is to dummy the effect of the strike on his body. Otherwise, you'd really have to strike him to get the desired result .
