I've done it in an hour with the car on jackstands. But I don't have AC or any of the other crap in the way

If you don't run into any problems I'd say 1-2 hours easy

If it was still my first time if I started at 8am could probably be done by 2pm. If I did it again with the experience I have now, probably knock off an hour or two.

I would allow 6-8 hours if you have never done it before.

It helps when you only have about 36" of exhaust on each side. Yank plug wires off, pull plugs and start unbolting the headers

^^^This. Some fit better than others, so that makes a slight time difference.

Took me and a bud 18 hours. Installed LTs, motor mounts, tranny mount, new plugs and wires, and removed air junk.

When your doing it just don't take too much time and take plenty of breaks to ease the pain in troublesome parts of the install.

Its about a 5 hr job but I would allow 6-8. Once you get the old manifolds off that is the time to replace or install some poly motor mounts if needed.

If you can afford to be without the car, I recommend putting it up in the air, either on a lift or jackstands, a day or so prior and soaking all the bolts/nuts with penetrating lubricant.

This will help to speed up the disassembly process.
