It won't hurt but it won't help either, unless the car is at speed.

Is there any benefit to running a 160* stat? Are they any cons?

I thought I had read that you need some of that engine heat up and around 200 to keep the engine oil thin and lubricant, and if it gets too much cooler it will affect HP and fuel economy, etc.

True and It's Overrated, but most who have already changed to cooler thermostat don't want to hear it...

The higher temps also aids in burning-off any moisture / condensation and some contaminates build-up and lowering temp only hurts the engine in most cases unless you live in the desert. The engines are designed to run at 200 deg. temp. in most cases, so unless you're racing and have a tune to make the most of the HP increase, it won't be much of a benefit.
