Okay so I basically have a stock ls1, built trans, 3600 stall, 3.73 gears, modified sts kit with a 78/75 turbo, 60lb injectors, 255 walbro, etc.. Not exactly sure what happened but oil pressure bottomed out on a launch and I developed knock.

I have a lq4 block with rotating assembly and a set of ls3 builder heads with intake.

What do you guys think a forged 370 or 408 may run me? I believe it has come that time to put together a combo for 15-20psi.

370 vs 408 depends on how much you want to spend. You may also want to factor in that your current turbo my be too small for a 408ci but may work on a 370ci.
