How can I tell the difference between a stock driveshaft and a aftermarket one?

possibly by the damper on the transmission yoke. the stock setup has a damper on the transmission slip yoke. an aftermarket setup typically has a new aftermarket transmission slip yoke which is then balanced with the new shaft. most aftermarket yokes that i know of do not have a damper. this doesn't work obviously if the oem slip yoke was reused, but they typically are not. and if a new shaft has a sticker or stamping on it that identifies who made it would indicate aftermarket, vs a GM part number sticker on it.
