These cars only have so much space you can work with. With larger twins up high in the engine bay and exhaust running out the back, there is too much going on to work it around ac and make it something that is serviceable and clearances good enough for an order and install kit. Stuffing 10 pounds of stuff in a 5 pound bag you will be happy the ac is gone with the room it frees up to make for a nice clean install, get the exhaust out the back, and be able to easily work on the car still.
