weird problem, can't figure out what's up?

weird problem, can't figure out what's up? ASR off
Cruise set at 70mph
temp reads a little less than 210
driving for 15mins @ 70mph
all of a sudden, the engine seems to hesitate/cutout sparatically, this coinsides with the temp gauge dropping to zero and then back to normal temps.
Now, I installed new heads and I had broken the temp sensor that sticks in the head, I have since replaced it. When it was broken, i rigged it up as best possible, but when i would hit a big bump, it would come off, and the engine would cut out, and the temp sensor would drop up and down.
Now I am assuming my new temp sensor is taking a crap, but this time no SES light has come on and it seems to operate normal, then screw up, then normal again.
Does anyone have any ideas? None of the wires are burnt, no leaks, nada.
Is there anyway i can hook up something to see while i am driving wtf the car is thinking when this is going on?
