Default IATs in the red and fuel trim too

This is what it told me. What could it be?

The IAT is probably high because you're just sitting there idling right? I was just doing that tonight and the IATs got into the 120 range because it was just sucking the hot air in off the radiator.(Sitting idling for ~10 minutes)

Sensor gets heasoaked. Drive it around and temps will go down.

what about the long term fuel trim in banks 1 and 2?

IAT temp of 111* is not a biggie, what was the air temp at the time you got that reading? The fact that it is red is just how the gauge parameters are set, that can be changed. As far as the long terms, you need some tuning, what ever changes you have made caused first the STFT to go rich, then after a period, the LTFTs followed, basically the changes made caused the 02s to read lean, the VCM adapted.
