Default Timing Swings

Can too low of a stall converter cause timing swings? Car is a 68 Camaro with a 2008 6.0L, LS3 heads, intake, and TB. Cam is 228/236, .629/.612, 112LSA. Trans is a built 4L65E with a Pro Torque 10" 2800 stall converter. The car idles okay for a while and then goes into this horrible choppy lope. Tuner says my stall is too low but how is that affecting it at idle? Any suggestions?
