There's some room to lower w/ the stock thermostat in place. I'm finding the stock 'stat opens at 190degF, fans don't come on until much hotter.

I have my fans coming on at 200degF, turning off at 195degF. That's much cooler than the stock fan settings, but doesn't put me up against the thermostat.

I'd go this route rather than a 160 thermostat personally. The LS1 seems to like to be run hot.

i believe the stock fans turn on at 225 & 235 respectively so moving the turn ons to 200 and 210 i think would be a good move.
