Default LT1 Speed Density Tuning

I have been using the Tuner Software-Tuner 101 document listed in a sticky in this section. Since I have an LT1, not an LS1, and LT1Edit, not the LS1 software, I have had to do some translation. I have my Knock Retard down to 0, my LTFTs down to ~(-6/+6), all in Speed Density mode (MAF unplugged, since LT1Edit does not allow me to just turn it off). The LTFTs are a little out of range, since the doc wants -5/+5, but I think that I am within range.
If I understand the Tuning doc correctly, I am now ready to start Open Loop tuning. I have an LM-1 with bung installed.
My questions are:
1) Do I perform the Open Loop tuning still in Speed Density mode?
2) If so, what do I do when I re-enable the MAF? I do not want to run in Speed Density mode after I am done, so this is a concern. But I am aware that the readings will change. Do I then fine tune these settings?
