Main VE table, Spark, PE table, MAF table. Have you read the EFI Live tutorials on scanning & tuning? Lots of good stuff about tuning here and EFI Live forum. Make sure you save your original tune before you start making changes.
You might be able to go to holden crazy & find a tune for a car very similar to yours for comparison. You just have to play with it EFI Live to get familiar.
