Default Overheating/Fans

I'm having an issue with the fans not coming on in my 04 GTO. I bought this car about three months ago and don't drive it very far. No mods. When I did some heavy driving a couple a days ago, I noticed the fans were not coming on. Upon further inspection, I noticed that both fans were not coming on at the temps they were supposed to. I also noticed that they were aftermarket autozone or whatever fans. They only brought 2 plugs and the GTO harness is a three plug. I plugged both fans to the "A" and "B" of this diagram, which I'm guessing is high speed settings, but still getting spilled coolant from the overflow tank. Both fans come on when I turn the AC on, but don't help very much as it still overheats.
Things I have done: bought new thermostat, new radiator cap.

If anyone was wondering, I bought OEM fans and the overheating stopped.
