I have tuning done, and have fans coming on sooner, but now they run all the time since I still have the stock t-stat in it....I will buy a hypertech unit, but didn't know which one to get...the 160 or 180 degree? Basically, is 160 too cold for the GTO (or any LS1 for that matter) or not?

Depends on where you live. He's here by me in Chicago and it IS too cool!
At full operating temp, in closed loop, Even on a warm day, it'd get warmer than 172/173* on autotap when cruising.
That's too cool for optimum. You want coolant about 10* warmer for best results.
Also, cars may vary. I ended up putting my stocker back in to get it to 183'ish when cruising.

I wouldnt' buy either. Use the stock unit and do your tuning in another way. You get absolutely no benefit from over cooling an engine. Because it's an all aluminum engine, you can actually run them hotter and not have any problems. Your money could be better spent in other areas and be more productive.

I'm running higher compression/ heads/cam/balanced crank/higher RPM's and I want to see my engine temp around 200......that is perfect for these LS1's.....cooler is not better unless your picking up babes at the bar.....Now I do run oil cooler (big sucker with dual filters) and trannie cooler.....oil never see's above 185...trannine around 160 max after a few hard runs......normal cruising down the road...
Water is around 190...oil is 180...trannie is 105.....

Use your display to check your engine temp,I think it's key off ,hold mode+set in,turn key to run ,now you can walk thru the display. You can drive you car in this mode also and watch your temp. Some have good results with the lower 160 some don't.If I off on the steps do a search on ls1gto.com

Runs mid 180's on a 30 degree day cruising at 70mph. Since its not hard to change, do it and see if you/car like it. Some cars run too cool, some run perfect. Won't know until you try

Fans and radiator size will determine where your car opperates. A T Stat will just control the "minimum" opperating temperature by holding coolant in the block till it hits that temp.
Where did you find a 180? The stocker is 195 and I've seen 160's but never a 180.
I run the stocker but since I've had a tune to lower the fans on/off point the car sits at 195~200 all day long.
