Running a stock 2001 LS1 here, 6000 miles since new, corvette batwing pan. I've got a good sized radiator, 160 degree thermostat, no oil cooler. Oil temps rarely exceed 250, usually hang around 180 to 220. My pressure is at 35 hot idle, 40 to 60 on the track, varying with RPM.

I would not use Mobile 1 5w-30 for the track as it does not protect the engine well enough for that kind of driving. Normal street driving and occasional WOT is fine for this oil, but sustained high RPM's is not ideal for suck a low weight oil. At least add a bottle of ZDDP to the oil before you go. I like to use Valvoline VR-1 Racing oil for the track, then change it when i get home. It is expensive but you can pick it up at PepBoys and Autozone.

I switched to Amsoil Dominator Racing 10w30 (product RD30QT-CA) and now making over 50 psi throught the sessions. It's about $125 shipped for a case of 12 qts.

Switch to a racing oil like mentioned above and you should see a drastic improvement. I use the valvoline VR1 non synthetic 10-30. It works really well, and is super cheap. Because I race the car often, I end up changing the oil every 1,000 to 1,500 miles. If you have carquest in your area, order a case and it works out to $6 a quart.
