Default how much can u drop comp. w/ head gaskets

Looking to lower the compression on a race motor to do some street driving. How much can you lower the compression with thick head gaskets?
I would love to drop a point so I can run 1/2 race 1/2 pump gas.
Starting with 600ci and 14:1 comp. What about making a billet spacer and running 2 sets of gaskets. Or is that just stupid? I do allot of stupid things.
