This might be a dumb question but what is the main job of an equalizer? And is it necessary to use on a full system upgrade? Including 2 subs?

An equalizer (whether preset or manual) controls the sound of the music. You can set the highs, the lows, the mids, etc. It's essential for fine tuning a system.

Are there any main differences between the brands or are they all generally the same?

I believe it more depends on the bands TBH, but I'm not an expert by any means.

Also, what about capacitors? What is there main purpose?

They help the system out with power. So say you aren't getting enough power, the capacitor will release some built up power at high loads to help out.
