Can you wire a gauge for oil and water temp? Is there a way to wire up 2 sending units to one gauge so I can switch between oil and water temperature. Like wire it through a switch so I dont need 2 gauges?

Yes its possible, but you'd better label the switch. That way you know what your reading. Not sure of the accuracy because of switch resistance.
