00 T/A v6 to ls1 steering rack

here is my problem I just did a swap in a 2000 trans am the v6 power steering rack is hitting my low mount alternator. The question is is there a difference in power steering racks from v6 to v8

Yes the LS1 rack is different. Faster ratio, doesn't use a rag joint, and I do believe the angle is different also which would explain the clearance issue with the v6 rack.
