Well your tire width depends on your rim width. Your rim width will depend on how much work you want to do. Many people run 11" wide rims in the back with 315 tires, some have stepped up to 12" rims with a 335 tire. However it sounds like it is a good bit of work to get 12's on the back.

I've got 19x12 z06 spyders on the rear with 305/30's and its definitely some work. I've done some serious hammering to get them to fit as well as they have. They still rub pretty substantially over bumps and when it goes off camber.
From what I've seen 10.5 wide wheels with 315's are about as wide as you can go without having to do any real work to fit them.
But it really comes down to how much tire you want vs how much work you're really willing to put into it...
