Default Performance difference between V-rated tires & Z-rated tires on the dragstrip?

A few months ago, I replaced my 48,000-mile factory GSC's with new 245/50/VR16 Continental ContiExtremes from my '88 Mustang GT. (The tires were a little too wide for the fox-body and the Camaro's factory Goodyears had puncture damage.) I haven't ran the new V-rated tires on the dragstrip yet so I'm curious to see how I would hook up with them. Since they're V-rated and not Z-rated, does that mean that they won't hook up as well as the Z-rated tires? Thanks in advance for the info.

As far as I understand it...

The speed rating only means they are suitable for speeds up to 149 - V and beyond 149 - Z...W, Y and (Y) are suitable for 168, 186 and 186+, respectively. This is mostly concerning the stength of the structure and the stability of the tire at these speeds.

The compound/tread pattern effect the hook the most (within a given size).
