Would these keep my headlights from fogging up? Just wondering if these would help. Or are they more for just protecting against rocks and stuff?

More for protecting against rocks and chips. To minimize/prevent fogging up or moisture on the inside of the lens, you need to make sure the headlight assemblies are nice and sealed around the edges. A good clean strip of silicone sealant around the edges should help.
