2005 CTS-V I just bought as a daily!
Wanting to do a few mods nothing major,
long tube headers should arrive tomorrow
full magnaflow exhaust system was on the car when I bought it.
LS7 clutch
Other than that it is bone stock.
Looking for feedback on what underdrive pulleys to run?
What cold air intake to run?
What cam specs is everybody running?
Any other nice mods would be greatly appreciated! Thanks for the potential help guys!

I wouldn't do underdrives. The stock alternator is shitty enough without being spun slower.
Long tubes are a nice addition. Look into motor and trans mounts, along with rear subframe bushings. Really makes the car come alive. The LS7 clutch is good, when you need to replace it, look into a clutch master cylinder upgrade from philistine. If it doesn't have a short throw shifter in yet, definitely recommend that, along with new shifter bushings.

x2 Under drive not worth it..cold air intakes in my opinion aren't either on this car but if I did one it would be lingenfelter's intake.
Cam is subjective to what you want, I would go custom and something for low end torque.
honestly though I would focus on what ryan pointed out, all of the mounts and rear cradle bushings... maybe driveshaft carrier bearing.. maybe some coil overs.
