Default Temperature Variances.

I was driving around the other day and noticed at about 60 to 70 MPH my temp gauge reads about 210. But when I speed up and cruise around 80 to 90 MPH the temp jumps up to around 230 or so. Temps never got above 230 though. The fans are wired into the ignition fuse by the previous owner so they are constantly on. Could this because I don't have the lower air damn to push air up into the radiator? The car didn't have an air dam when I bought it btw.

Based on what you've described, I would definitely replace the missing air dam before looking at any other cause. This will very likely solve your issue, but even if it doesn't it will still help.

The air dam creates a high pressure in front and probably more importantly at 90 is it creates a vacuum behind it. Without it there is a chance the high pressure is now behind the radiator fighting the fans.
