For starters you will need the motor/trans and the price for that has too many variables for me to really determine that haha.
If you can do all of your own work/fabrication you will make it out a lot cheaper than most.
If you buy a motor/trans with a harness/computer you will need to make it "standalone" similar to these harness' >http://secure.ultracart.com/catalog/PSI/
Then you will need the fuel stuff, which all depends on what you car already has and your goals, there again I do not know your situation so I cannot give you a price on that.
You will need the suspension (k-member, and trans crossmember) in order to mount said motor/trans so you could go the cheaper route and get these!> http://www.ajeracing.com/mustang.php
Or make your own mounts (for the cheapest) from your current, there is a write up on how to do so somewhere you just need to search for it.
You will also need headers (for the loud and scary part) and the cheapest LS swap headers are arounf $500 I think.
Really everyones build budget is different, my personal budget and what I expect to spend is about 10k on my car if not closer to 15k.
There are guys that have completed said swap for around 5k and did a really good job.
You just need to do some research and look at other peoples build.
Good luck with your build.
Hope this helps a little.

Yea under 2000 is not going to happen unless you get some free parts and do everything yourself.

Although there is cheaper things I could have done...here is my current price list of parts

Car: 700
Complete 5.3: 500
AJE K Member w/ mounts: 320
LT1 Radiator/Fans: 50
Manual Rack: 250
Accessory Bracket: 100
Head studs/gaskets: 130
CTS-V oil pan: 200
Non-EGR Manifolds: 50

That's a little over 2000 bucks there and im nowhere near ready to drive.

The bare minimum to make it run would be trans, stall, custom driveshaft, and custom harness...which, in my mind of being realistic, is almost 2000 dollars haha

So many people never actually add up the true costs they have in their car and I actually added up EVERYTHING this time on my project. You will probably have almost $400 just is miscellaneous stupid crap that people never list or remind you of such as: random gaskets, sealants, random nuts, bolts, locktite, rtv, oil, oil filter, trans filter trans fluid, radiator fluid of choice (water and water wetter or rust inhibitor or anti-freeze/coolant if up north), hose clamps, stupid one time use tools, zip ties, vac line, vac tees, etc the list goes on.

No joke I bet I have close to $2,000 just in the stupid nickel and dime parts and random crap that just adds up. People always forget about the small stuff and the NUMEROUS trips to the auto store or hardware store for $2-$10 purchases that they just forget about.

Not trying to rain on your parade, just don't want to see someone go into something like this and realize halfway through that they aren't going to be able to afford to finish because they have already used up a quarter ($500 of $2000) of their budget on stuff they completely forgot to factor in. It seems like its become a bragging game on who can do an ls swap the cheapest and people leave stuff off to make it look like they did it cheaper than x person did.

True statement here! ^
That's why I figure I will spend a minimum of 10k on my swap.
That's not including the car.
But I figure all said and done, to be at the place I want it to be, I will be closer to 15k.
And at 15k I still will only make like 450rwhp and have an 8 point cage, most of my budget is going to suspension and such though.
I will spend about 4k on the motor and such, 3k on the trans (TKO600RR and bell housing etc) and then everything else.

It's still not going to happen for 2K. There are just too many little things that you end up having to buy.
