So with the Holley 302-2 oil pan, it should provide enough clearance. Will I still be able to use the UMI performance mounts or should those be changed as well to relocate the engine?
Like I said, I am running the th350 and its already bolted up, but the power steering pulley is hitting the power steering box.
Should I use mounts that relocate the engine or just get a smaller pulley?

The ability to do so will become apparent to you once get to the point of trying to optimize your U-joint working angles. Both sets of the new Hooker A-body engine brackets were specifically designed to utilize the clearance provided by the 302-2 pan to drop the front of the engine as low in the chassis as possible; there are no other brand/type of mounting brackets on the market that provide the same advantage.

I am well into my '70 Skylark restomod and am wondering what did you do for gauges? Did you change out the dash or is there a conversion kit out there to go from mechanical gauges to electonic?
