Default Stepping down to a 5" PS pulley, need help on pump pressure changes

I ordered the dirty dingo 5" power steering pulley for my Corvette (97-04 type 2) pump to clear the gear box fittings.

I'm concerned about stepping down from a 6.5" pulley to a 5" pulley is going to change the pump pressure drastically (higher pressure) to my 1989 Camaro Iroc gearbox.

Dirty Dingo suggests a Borgeson shim kit 899001 to step the pressure down. But I have no clue how much difference that size drop will make in terms of pressure.

Corvette pump output is 1250/1350 psi I think but am unsure what the 89 iroc gear box needs to be "happy"..but I think it's 1000-1200 psi based on the stock camaro pump.

Could use some help or direction here I think. I need a good starting point so I can install this once and not have to pull the pump and change the shims after the car is buttoned up and making a mess.

Here's the info from here http://borgeson.com/instructions/899001

Pressure Chart

The Following Chart is for reference only
different pumps may vary pressures.
Mustang Rack and Pinions generally
require Approx 1000 PSI.

No Shims 1350PSI
1 Shim 1200PSI
2 Shims 1100PSI
3 Shims 1000PSI
4 Shims 850PSI
5 Shims 700PSI

Anyone know of any tools or formulas to figure out the pressure differences based on pulley size in a power steering pump?

Changing the pulley won't change the pressure, just the rpm it'll get there. There is a calculator online for pulley speeds. That said I've had to change pulley sizes for fitment and haven't had a problem.
