has anyone converted a LS3 motor and automatic transmission in a 1986 Monte Carlo? How did you convert the couple from the tail shaft to a universal joint?

It might be easier to have a new driveshaft made with the existing type of joints on each end so it all just hooks together. The conversion you speak of has been done dozens of times.

the coupler does not seem to flex enough to allow for the rear end to move up and down.

It doesn't have to move more than 10 degrees. Even less.
