Alright, well been a while since my last update... haven't really drove the car.
I am sure my gauge works, because last week I lost half of my coolant and the temp rose up as it would if you lose water....
Well today I purged everything again and went ahead and put some cardboard in front of the radiator (I didn't disconnect the fan because it is the mechanical fan) and I got the temp to stay steady at 185*.

glad to see you have something figured out, but no matter how big the rad is, how can it pull heat off the engine if the thermostat is closed?
