The calipers are nearly identical. The Z51 larger rotors are accommodated by the brackets/abutments which can be used with any C5 caliper or any C6/C6Z51 caliper (excluding C6Z06). Even pads are interchangable between them.
After you install the C6Z51 brackets you can use Z51 spec rotors which are 13.4" front and 13.1" rear. There are a couple of aftermarket rotors available for this spec as well (Racing Brake makes a sweet setup I'll be moving to sometime - just using the OEM now).

Yes, calipers are the same (they're slightly different aesthetically) the rotors are bigger (13.4f, 13.1r) but the brackets are different (the brackets are what hold the caliper in position).
So if you were buying a setup you could just buy 4 brackets, 4 rotors, reuse your C5/C6 calipers, pads and lines. I already has SS lines on my C5 setup and when I installed the Z51 stuff, I reused my pads and lines.
FYI, I actually used C6 calipers too - I sent off my C6 cals/brackets to be PC'ed, so I could just swap everything out at once, and not have the car torn apart for a week. I had originally planned on using aftermarket rotors, but the seller threw in the OEMs for like $100 and they had < 1000 miles (plus they were from an '07 so they had a nice anti-rust treatment GM starting using).
