Twin S256's will work. Just saw a pair on an LS3 make 688whp/690wtq at 8lbs.
Those are not small turbos. Add in some boost and your 800whp is done.
1000whp might be tight, but any bigger won't be much fun IMO.
Twin 366's will be overkill. It would be like V-tec...on steroids.
I've driven and built/modded quite a few turbo cars. The ones done right feel amazing. Lag is the worst. Even 1000rpm of poor response will feel like an eternity.

These are all good points. I ended up buying a pair of master power t61's let the fun begin!
