I'm swapping in a LS3 into my 01 Camaro and it has the stock LS3 throttlebody. I just found a LS1 to LS2 conversion harness and have a question.

Is that all you need to use the LS2/3 for? What do you do with your cable? Just remove it?

That is to convert a car than has an electronic LS1 throttle body, such as a Corvette.

You either need to convert to a different PCM, wiring & electronic throttle pedal to control the LS3 engine or retrofit to a larger cable style throttle body.
