Default Should I hold off on assembling motor?

Just got my bottom-end back from the machine shop today. Right now the motor is disassembled with the block in a plastic bag. Should I hold off on assembling the bottom-end until I have the top end and the other parts ready to go? Or am I okay as long as I put a film of oil on cylinders and other parts that may rust?

You should be coating the cylinder with oil during assembly anyways, which should be fine in protecting the cylinders. I would assemble, then measure how far the piston is above the deck and use that to determine head gasket thickness.
