Look at the condition of the head bolts and see if they have been rounded by a wrench. Check the harmonic dampener for signs of being pulled. Look at the motor mounts for signs of being removed.

No need to pull the valve cover. Look at the head bolts next to the spark plugs.

To answer your question though - typically valve cover gaskets on LS1s are fine to reuse. It is possible one might tear when you pull the cover, but you should be fine reusing it.

A better solution to your original question is to have someone perform a leakdown test on your engine to get a reading of your rings and valves. Who cares if it has been rebuilt as long as your cylinder leakdown is say >20% and your cranking compression doesn't vary from cylinder to cylinder.

the easiest way to know if it was rebuilt is to look on the freeze plugs on the driver side. i know in California it is required to put a dime sized metal stamp on one of them. it makes the warranty valid. if the engine overheats it melts it so this is how they tell for warranty

I put AFR 205s and a 224°/230° Comp cam in my LS1 at 153k miles. It now has 186k miles and still running fine. If your Camaro is running well, go ahead and start modifying it. Plus a 100 hp nitrous hit will be fine as long as you have adequate fuel supply and don't detonate it.

The metal stamp on a freeze plug should not be a method to determine if it was rebuilt in the other 49 states. That's about the craziest thing I have ever heard...
