Oil Pressure Issues

Over the last several months, my OP has steadily been decreasing. I have a stock bottom end LS1 with head and cam swap and the usual boltons. The engine has been rebuilt twice so the miles arent an issue. She does go through oil, which I will check tomorrow, but she does this whether the oil is FULL or a quart low...

Idle Oil PSI- 7-10 (needle just started to bounce around, instead of sitting steady at those numbers)

Driving Oil PSI- Depends on RPM and engine temp (example: 2500rpm @ 70 mph with 170 temp will read about 25 psi)

Also, when in drive (D), and going 50% + throttle to get that highway speed, she acts sluggish and I hear the infamous "valve chatter."

The only thing is that all the readings seem fine (still progressively dropping) on startup when engine is cold. Only seems to be a big issue when at operating temperatures.

Any ideas out there???
