Default Head gasket fitment

Y cometic head gaskets don't quite fit over my head dowels. Do I trim them? Or just put the head on and it will seal when I start to torque them down

They're usually a pretty tight fit.

Well they won't push down by hand, do I trim them or just put the head on and when I bolt it down it will push it into place?

I just started them on the dowels then slide the head down on and tapped each end of the head with my hand until they seated or you can take a socket a little begger than the dowel and lightly tap it over them. I would not trim them they are meant to be snug.
