For the launch, I just stall it up very lightly to about 1600-2000 and get on it as I feel it holding traction. It's going to take practice to gauge it better. I do it with traction control off, too invasive for my likes.
Edit: I know my sig has a crappy 2.2 but I have cut 2.0x previously, I just get fed up at the lack of traction with the FWD and get frustrated at the car and yell it at it for not being RWD when going down the return road.
With your mods, you should be alright stalling a little over 2k and ease it to the floor. Put the front tires down around 23 lbs, do just enough of a burnout to get a wisp of smoke. skip the waterbox completely.

Where are you located? What track are you running at? What kind of 60 foot?
Get some better tires and hold 2nd gear and you should be clsoe to 13's.
I can't comment on the JET MAF, but it's a consensus on the forum that it is not beneficial for our cars.
