... when bolting/unbolting flywheel/flexplate and pressure plate?

When unbolting just move 1/4" extension to other side of pan.

Yeah you're going to have to get creative. I used a breaker bar between the pulley and against the sway bar (when I had it).

Go buy a flywheel tool. It's a prybar with an arm that sticks out to the side that has a 90 degree bend at the tip. It engages the ring gear teeth at two points so you can hold it still.

To unbolt, absolutely. To bolt up though I'd rather stay as close to the torque specs as possible.

I just had someone hold the front with a breaker bar (wedged in the balancer) and I torqued everything to spec just fine. Just make sure they're not whimpy :P
