Do i HAVE to have new slave and pilot of LS7 clutch?
I didn't know that I should replace the pilot and the slave and the shop installed everything and says the car won't disengage... and they did bleed it... what should I tell them. It's going to run me another 400 to tear apart the entire transmission again... what do I do... I already can't afford all these extra parts. Should I tell them I'll just take car as is. Or do i have to have the new pilot and slave? My apologies for the long list of questions but my bill was at 500 now it's almost 1000 I want to make sure I get everything in right and quickly been without a car for a week now.

New pilot & slave are strongly suggested on any clutch install if you haven't upgraded the slave yet. Pilot bearing I would do on every clutch install, just for insurance.
Your clutch should have just bolted right up & been fine after propper bleeding. I'm not sure what they did. No one else has had a problem that I have seen.
